In honor of national sneak zucchini onto your neighbor’s porch day, I created the following chocolate zucchini cake – gluten free, dairy free, nut free and vegan. I have to say that this is my family’s favorite way to eat zucchini. This cake is xanthan gum-free for those that can’t tolerate xanthan gum. It is an easy cake to put together and you can feel good that you are eating your veggies, right? Chocolate makes everything better!

Chocolate Zucchini Cake – Gluten-Free, Dairy-Free, Egg-Free, Nut-Free and Vegan

1 c. sorghum flour
3/4 c. white rice flour
1/2 c. tapioca starch
1 tsp. baking powder
2 tsp. baking soda
1/2 c. cocoa powder – (I used 1/4 Trader Joe’s cocoa powder and 1/4 c. Hershey’s Special Dark)
1 tsp. salt
1 c. sugar
1/3 c. oil
1 1/2 c. grated zucchini
1 c. Sour Milk = rice milk + 1 tsp. vinegar (I used apple cider but any light vinegar will do)
1 c. chocolate chips – I used Trader Joe’s but Enjoy Life foods are free of the top 8 allergens. Use what is SAFE for you.

Preheat oven to 350*. In a large bowl combine all dry ingredients. Add oil, zucchini and sour milk, stir well. Pour into a greased pan. I used a 9×13. Sprinkle the chocolate chips over the top of the wet batter. Bake for 15-20 minutes. The top will be firm to the touch when done. Cool completely on a cooling rack. Sprinkle lightly with powdered sugar. Serve with your favorite frozen dessert. We really like the Vanilla Rice Dream. Enjoy!
