I am so excited to share this recipe. I have struggled with waffles since my son was put on this extreme diet over three years ago. They always stuck and made a nightmare of a mess in my waffle irons. While on our major road trip this month I was introduced to the Waring Pro Belgian Waffle Maker. I am not paid to promote this item. This is the greatest waffle maker ever. I know they make a double one, so maybe that would be the “cooler” of the two. Anyway, I am excited to share my latest recipe with you. I am in the process of creating a GF all-purpose flour mix that I plan to market, so I am not at liberty to share that recipe. Use your favorite GF all-purpose flour mix. I have used GF Bisquick and I always add some sorghum flour to it. You could also use something like Pamela’s all-purpose mix. Please let me know what you use and how they turn out. These could also be made into dessert waffles and topped with your favorite non-dairy frozen dessert.

Gluten-Free, Dairy-Free, Egg-Free, Nut-Free and Vegan Waffles
1 Tbsp. flax meal + 3 Tbsp. hot water (to replace 1 egg)
1 1/2 c. GF All-purpose flour mix
1 tbsp. molasses
1 1/2 – 2 c. oat milk (other non-dairy milk will work) Depends on how thick you want your batter.
3 tbsp. corn oil (other vegetable oil will work)

In a large bowl mix flax meal and hot water. Let sit for a few minutes to gel. Then add remaining ingredients and stir to combine. Preheat waffle iron. Follow waffle iron user instructions. HINT: I always wait until it stops steaming before opening. The beeps and buzzers are for regular wheat waffles and I have found that GF take a little longer. Top with your favorite toppings. We made bananas foster topping for our 2nd batch. Sorry no pictures. They were really yummy.
