Looking for a pesto that is nut-free and dairy-free? Look no further! This one is for the garlic lovers out there. If you are lucky enough to have garlic growing in your yard then this is a great recipe to use the scapes (flowering tops). If you do not have garlic growing then look for scapes at your local farmers market or natural market. This pesto is very versatile. You could toss it in pasta, spread it on crunchy gf french bread, or if you really enjoy garlic spread it on gf crackers or make pesto chicken breast. It would also be really good spread on Focaccia. This pesto is nut-free because I used raw sunflower seeds and dairy-free because it uses sheep’s milk Pecorino Romano cheese. It could be vegan if you choose to use a non-animal based cheese product.

Garlic Scape Pesto- Dairy-Free, Nut-Free and Vegan
3oz Garlic Scapes -about 8
1/2 c. olive oil
1/2 c. Pecorino Ramono Cheese-finely grated (vegan cheese product can be substituted)
1/2 tsp. salt
1/2 c. raw sunflower seeds
2 Tbsp. rice vinegar
In food processor add garlic scapes and slowly add olive oil while processing. Add cheese, salt, sunflower seeds and vinegar and continue to process until it reaches your desired texture. Add to pasta, pizza, chicken or crackers and enjoy!!!
Yield- ~1 1/4 c. pesto
